From time to time i get some guava paste, just for a change of pace (its 99% of the time quince paste around Portugal hehehe), so after eating most of it i decided to add some to some fluffy muffins, why? Why not! And this combination feels like it was made in heaven, a dense, lightly sweet muffin batter wrapped around a little cube of rich, deeply sweet brazilian guava paste. The contrast is absolutely everything.

This recipe was an adaptation of a simpler muffin recipe that had a crumble topping, but i thought that would make it all too sweet, so i just sprinkled a pinch of crushed almonds on top of each muffin instead. It adds another nice “nutty” 😀 texture and made it even better, than i was expecting.

Ohhh ohhh and if you’ve never tried guava paste, you should, its a brazilian staple, with a thick, jammy, floral sweetness… you can just imagine that combination inside the muffin, you get a nice fluffy natural sweetness of the muffin and then you get that burst of the guava paste in the middle, just amazing! Let’s check the recipe!

Oh a delicious Brazilian inspired muffin recipe with a creamy batter stuffed with a little piece of guava paste. Dense, lightly sweet, and absolutely irresistible, don't say I didn't warn you!

Ingredients

  • Guava Paste – 70g
  • Butter – 160g (Softened)
  • Flour – 160g
  • Sugar – 150g
  • Eggs – 2
  • Almonds – A pinch (Chopped)
  • Salt – A pinch

Directions

  1. Start by whisking the room temperature butter with the sugar until creamy.
  2. Add the eggs and whisk well.
  3. Add the sifted flour and mix well with a wooden spoon without whisking.
  4. Preheat the oven to 180ºC (350ºF) and line 12 muffin tins.
  5. Pour a little batter (I poured 2/3) into each tin, then cut cubes of guava paste and place them on top of each cupcake, pressing them down slightly. Repeat for all muffin tins.
  6. Pour the remaining batter and sprinkle each cupcake with crushed almonds. Bake for about 16 minutes, or until golden brown.
  7. And that’s it! Let them cool and they’re ready to serve. Enjoy!
Notes & Tips: This is a delicious muffin recipe with a little Brazilian flair, all thanks to the guava paste filling. That said, you can absolutely swap it out for Portuguese quince jam (marmelada) or any other thick jam you enjoy. The key word is thick, since a runny jam will just dissolve into the batter and you’ll lose that lovely gooey center.

make sure your butter is truly softened at room temperature before you start, since cold butter won’t cream properly and will affect the texture of your batter.

When pressing the guava cube into the batter, don’t push it all the way to the bottom or it may stick, just nestle it gently in the middle.
