Grilled chicken meets creamy avocado, what more can you want? Hehehehe, easy, delicious and nutritious!

Ingredients

  • Chicken – 1 Breast
  • Avocado – 1/2
  • Onion – 1/2 Small
  • Garlic – 1 Clove
  • Cilantro – A Pinch
  • Soy Sauce – A Drizzle
  • Rice Vinegar – A Drizzle
  • Olive Oil – A Drizzle
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Cut the chicken breast into cubes and season with a pinch of salt, pepper, and a dash of soy sauce.
  2. Heat a grill or grill pan and grill the chicken pieces until golden brown, remove and place it in a bowl.
  3. Cut the avocado in half, remove the pit and use a spoon to scoop out the flesh from one half, then dice it and add it to the bowl.
  4. Chop the onion, garlic, and cilantro, add everything to the bowl, season with a dash of vinegar, a drizzle of olive oil, a pinch of salt and pepper, mix, and it’s ready to serve. Its that simple and easy! Enjoy!
Notes & Tips: Make sure your avocado is ripe but still firm. It should yield slightly to gentle pressure but shouldn’t be mushy. A perfect avocado makes all the difference in this salad! (If its too mushy, yeah think guacamole or something else).

If you have a few extra minutes, let the chicken marinate in the soy sauce, salt, and pepper for 15 to 30 minutes before grilling. This deepens the flavour beautifully.
