Ingredients

  • Long Grain Rice – 200g (Cooked the day before)
  • Onion – 1 Small
  • Carrot – 1/2 Small
  • Garlic – 3 Cloves
  • Egg – 1
  • Olive Oil – A Drizzle
  • Soy Sauce – A Drizzle
  • Cilantro – A Pinch
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Start by finely chopping the onion, carrot, and garlic, then place them in a large frying pan over medium heat with a drizzle of olive oil and sauté.
  2. When the onion begins to brown, add the rice (already cooked and dry) and mix. Let it fry a little, adding a little more olive oil if necessary.
  3. When the rice begins to toast, whisked the egg with a pinch of salt in a separate bowl.
  4. Push the rice to one side and add the egg, let it cook and then crumble it into strips and mix it into the rice.
  5. Season with a dash of soy sauce, stir and taste, adjust with salt and pepper and that’s it, serve with a pinch of chopped cilantro on top, enjoy.
Notes: The day-old rice rule is non-negotiable – freshly cooked rice will turn mushy. Let that rice chill overnight in the fridge for the perfect texture.

Use the largest skillet you have so the rice can actually fry instead of steam.

High heat is your friend, once you add the rice, don’t be afraid to let it get a little crispy and toasted for maximum flavor.
