I absolutely love little sausage pastries, what the British like to call pigs in a blanket, they’re a super easy and quick snack to make and as you can see, you can make a thousand and one variations. These are a cute and delicious twist on the classic British/American sausage roll or pigs in a blanket, just using a nice crispy German sausage and some nice and creamy brie cheesem it’s like the perfect American/British/German/French/Portuguese alliance! In this case I went with a type of sausage with a more intense flavor and with brie cheese to make a pastry with a more interesting and less sweet flavor, it turned out delicious.

Trust me these little beauties are the kind of thing that disappears from the plate before you can even blink. The combination of that snappy bockwurst sausage with the creamy, melty brie wrapped in golden, flaky puff pastry is just perfection. Whether you’re making them for a party, a game day snack, or just because you deserve something tasty on a random Tuesday, these pastries are always a hit. Let’s get to the recipe.

German Sausage and Brie Cheese Puff Pastry Bites

These are the perfect party pleasers, trust me, you can make them pile high these will all be gone before anything else....

Ingredients

  • Puff Pastry – 1 Roll (+/- 200g)
  • Bockwurst Sausage – 2
  • Brie Cheese – 8 Slices
  • Egg – 1 for Brushing
  • Oregano – A Pinch
  • Pepper – A Pinch

Directions

  1. Start by preheating the oven to 180ºC (356ºF) and line a baking tray with non-stick paper.
  2. Cut the puff pastry roll in half to make 16 triangles, place a piece of brie cheese and a piece of sausage on the large part of the triangles.
  3. Season everything with oregano and pepper, roll each puff pastry into a roll.
  4. Finally, place them on the baking tray, whisk the egg and brush it over each puff pastry, bake for about 25 to 30 minutes until golden brown and that’s it, ready to serve, bon appétit.
Notes: If you can’t find bockwurst, you can use any good quality German-style sausage, or even a nice bratwurst. Just make sure it has good flavor and a nice snap to it.

While brie is absolutely delicious here, you can swap it out for mozzarella (as the recipe name suggests!), camembert, or even a sharp cheddar if you want something with more bite.

If your puff pastry doesn’t come pre-scored, simply cut it lengthwise in half, then cut each half into 8 triangles (like you’re cutting a pizza).

You can assemble these ahead of time and keep them in the fridge for a few hours before baking. Just brush with egg right before they go into the oven.

These are perfect with a good mustard for dipping—try a grainy Dijon or a sweet German mustard.

These are really big sausages, so cut your sausages to fit the triangles, you want enough sausage to taste it, but not so much that the pastry can’t wrap around it properly.

Don’t skip the egg wash! That’s what gives you that beautiful golden, shiny finish. If you want extra shine, do two coats of egg wash.

These freeze beautifully! Assemble them, freeze on a baking sheet, then transfer to a freezer bag. Brush with egg wash and bake from frozen, just add 5-10 minutes to the baking time.
