Layered Mille Crepe Cake with Mascarpone Cream and Fresh Fruit

Happy holidays! Today we have a recipe that’s super simple yet at the same time quite the undertaking haha, a gorgeous mille crepe cake with fresh fruit. This is a fantastic dessert for the holidays because it’s delicious, light, and packed with fruit, which always helps to escape from the more traditional chocolate, sugar and cinnamon that many holiday sweets share.

I say it’s quite the undertaking only because you have to make a pile of crepes and then assemble the cake, which takes a bit of time, but in terms of difficulty I’d almost say it’s too easy, especially after you made the crepes and it’s one of those desserts you can easily make with the kids helping out. In this case, I made the filling with strawberries and bananas, but of course you can use any combination of fruits, and if you don’t have a specific one you can always use canned fruit (just dry it out well before using), even though that’s not ideal just because it will be extra sweet ;D

The final result is not only beautiful, but the layers give a fantastic texture to the cake. Combine that with the mascarpone whipped cream and you have a divine combination, I’d even say… a delicacy! cue the drums

I’m not going to repeat the crepe recipe here, since I used my classic crepe recipe which is fantastic on its own. That recipe makes about 20 crepes, but I used 12 crepes for the cake, of course you can use more, it’s really up to your taste. So let’s get to the recipe! ;D

Layered Mille Crepe Cake with Mascarpone Cream and Fresh Fruit

Yummy stacks on stacks of crepe-y goodness, layered with mascarpone cream and fresh strawberries and bananas.... whats not to love ;D

Ingredients

  • Crepes – 12
  • Cream – 200ml
  • Mascarpone Cheese – 125g
  • Sugar – 2 Tablespoons
  • Bananas – 2 (Ripe)
  • Strawberries – 280g

Directions

  1. Start by making the crepes. You can follow this delicious french crepe recipe heheheh.
  2. Once you have made the crepes, whip the cream. When it starts to thicken, add the sugar and whip a little more.
  3. When the whipped cream is ready, add the mascarpone cheese and whip just enough to incorporate everything and make it creamy. Put it in the refrigerator.
  4. Wash and trim the strawberries, chop them and keep a few whole ones for decoration at the end. Open one of the bananas and chop it. I chose to chop the filling because I think it helps to cut the cake more easily. You can, of course, add the fruit in thin slices, but I think it will be more difficult to cut perfect slices that way.
  5. Start assembling the cake. Ideally, do this on the plate or bowl where you will serve and cut the cake. Once assembled, it will be solid but not solid enough to move easily from one plate to another.
  6. Start with a crepe followed by a layer of mascarpone whipped cream and strawberries, add another crepe, more whipped cream and banana, and repeat until you reach the top, where you will cover with the rest of the whipped cream and decorate with bananas or strawberries to your liking, and that’s it! Bon appétit and Merry Christmas.
Notes & Tips: Instead of the whipped cream, you can use pastry cream, chocolate ganache, or even Nutella.

I highly recommend chopping the fruit rather than slicing it thinly, it makes cutting clean slices SO much easier when you’re serving.

Make sure your heavy cream is very cold before whipping for best results.

The assembled cake is best served within a few hours of making it, but you can keep it refrigerated for up to 24 hours.

Don’t be tempted to move the cake once assembled, it’s sturdy but delicate. Assemble it on your final serving plate! Use ripe but firm bananas, overly ripe ones will get mushy and make the layers slide around.

Save your prettiest strawberries for the top decoration to make it social network sharing worthy, hahahaha!

If you have leftover crepes (and you probably will!), they freeze beautifully. Just layer them with parchment paper and wrap well.
