Today, I have a super quick drink recipe for you! I bought some really ripe mangoes, okay, maybe they’re not from Brazil, but this doesn’t stop this from being a simple, delicious type of Brazilian recipe and a variation of the traditional mango smoothie. In this case, with the addition of coconut milk, it became a delicious smoothie with a fascinating coconut and fresh mango flavour that helps cut through the sweetness.

I didn’t add any sugar because the coconut milk and mango were already pretty sweet, and I think sugar would have masked a lot of the natural flavours. Also, if you make this with canned mango, you definitely don’t need to add sugar because it’s even sweeter. This is such a super easy and delicious smoothie, mango and coconut are truly a fantastic combination that makes for a real summer treat! Let’s check the recipe!

This is one of those not really a recipe... recipe, more like a reminder that you can make a delicious drink at home! Yums!

Ingredients

  • Mango – 2
  • Coconut Milk – 200ml
  • Milk – 300ml
  • Sugar – To Taste (or Honey or other Sweetener)

Directions

  1. Start by peeling the mangoes. Note that I had one large and one medium mango. This is an adjustable recipe, so it’s a good idea not to add everything at once. Blend and taste as you go to adjust it to your liking, more mango or more coconut milk or more milk, until it’s perfect.
  2. Once you have peeled the mangoes, place them in a blender or mixing bowl with a hand blender (or table blender hehehe), add half the coconut milk and half the milk, and blend well until you have a smooth cream.
  3. Taste and add more coconut milk and milk until it is to your liking, blend again, and it is ready to serve. Enjoy!
Notes: This is a super hyper simple recipe that you can always adjust! In my case, it turned out smooth and creamy, but if you find it’s too thick, add a little more milk. If you find it’s not thick enough, don’t add all the milk or add more mango. You can also add mint or ice to cut the sweetness. You can also garnish with a little shredded coconut on top. And of course, add sugar or other sweetness if you feel like it.
