I love this recipe, i think its a super easy recipe that is perfect for gatherings, and a bit more elevated than just a board with some cheeses and smoked meats.

Ingredients

  • Camembert Cheese – 1
  • Yellow Bell Pepper – 1
  • Red Bell Pepper – 1
  • Garlic – 1 Clove
  • Olive Oil – A Drizzle
  • Pepper – A Pinch
  • Salt – A Pinch
  • Bread – To Taste (Toasts, Tortilhas, etc)

Directions

  1. Start by roasting the two peppers in the oven at 180ºC until the skin turns black and the peppers are wilted, then remove them and peel off the skin.
  2. Cut the peppers into thinly slices, as well as the garlic.
  3. Now place the Camembert cheese in an ovenproof bowl, make a few cuts on top of the cheese and place some slices of the roasted peppers on top, along with a sliced clove of garlic. Season everything with a pinch of salt, pepper, and a drizzle of olive oil.
  4. Take it to a hot oven to a golden, bubbly and soft cheese and roast the garlic a bit, Serve immediately with toasted bread or crackers. Enjoy!
Notes: Please note that i… kinda… forgot to take a photo after the cheese was baked, it was a party and i had to cook other things, so no photo, but trust me when i say it was a big hit, and looks super yummy (and i still had a quick taste before it was gone hehehe).

If you’re short on time, you can use jarred roasted red peppers instead of roasting fresh ones. Just drain and pat them dry before using.

While camembert is traditional, brie works beautifully too. Look for a ripe wheel that gives slightly when pressed, this ensures maximum creaminess when baked.

You can roast the peppers up to 2 days ahead and store them covered in the refrigerator. This actually improves their flavor!

Besides bread and crackers, try serving with sliced baguette, water crackers, or even apple slices for a sweet contrast.

Add a sprinkle of fresh thyme or rosemary, or drizzle with honey for a sweet/savory twist.

The cheese is ready when it’s golden on top and feels soft and jiggly when the dish is gently shaken. Don’t overbake or it may become too runny.
