Hey hey, so here’s the kind of cookie I make when I don’t know what to do with half a jar of peanut butter sitting in my pantry. And honestly, I know exactly why that happens, haha. I buy a jar, I’m super excited about it, I use like a quarter of it, and then… I’m just over it. Kind of like Nutella, right? First spoonful, oh my god. Second spoonful, amazing. Third spoonful… yeah, I’m good, thanks haha.

But peanut butter in cookie form? Oh now we’re talking, You can knock out a whole tray no problem haha. The recipe is super simple with just 4 ingredients, and the best part is how versatile it is. You can use any kind of peanut butter from smooth to chunky, you can throw in chocolate chips, stuff them with caramel or chocolate, add spices, basically anything that plays nice with peanut butter is fair game here, and this recipe is going to work out perfectly every single time, let’s get into it!

One more thing worth mentioning because I think it’s pretty cool, this recipe works a lot like Nutella cookies. The peanut butter is doing double duty here, it brings both the flavor AND the fat to the dough, which is exactly why the ingredient list is so short and the whole thing comes together so fast. Sometimes you just need a 4 ingredient cookie, so easy to make that you can almost do with your eyes closed (please don't close your eyes while baking hehehe), this is the plain version, but feel free to add nuts or chocolate chips, make it your own.

Ingredients

  • Peanut Butter – 250g (With Chunks)
  • Flour – 100g
  • Brown Sugar – 200g
  • Egg – 1

Directions

  1. Place all ingredients in a bowl and mix until you obtain a smooth dough.
  2. Form small balls of dough, trying to make them roughly the same size so they bake evenly. Arrange them on a baking sheet lined with parchment paper.
  3. Bake for about 12 minutes, or until golden brown.
  4. Remove from the oven and let them cool before eating. They should be crispy on the outside and creamy/chewy on the inside. Enjoy!
Notes & Tips: If you only have smooth peanut butter on hand, no worries at all, just sprinkle some crushed peanuts on top of each cookie before baking to get that extra texture and crunch, or just go with smooth, nothing wrong with it.

Don’t overbake these! Twelve minutes might feel like not enough, but they firm up a lot as they cool. Pull them out when they look slightly underdone and trust the process.

These are incredibly versatile, so feel free to mix in chocolate chips, drizzle melted chocolate on top once cooled, or even press a square of dark chocolate into the center right after they come out of the oven. Anything that pairs well with peanut butter is going to be a winner here.

Store them in an airtight container at room temperature and they’ll stay good for up to 5 days, though honestly they never last that long haha.
