I know, I know ;D I absolutely love bananas and banana breads! Ever since I discovered this recipe, it’s become a bit like my world’s best carrot cake™ obsession, haha. I end up making it several times a year. This time around, I’ve created a variation with chocolate in the batter and apple as a topping. I think chocolate pairs beautifully with banana, and banana harmonizes perfectly with apple, everything together turned out super lovely and, naturally, with that dense and creamy texture typical of a banana bread/cake.

This is a delightful variation of a classic banana bread, elevated with rich chocolate and warm cinnamon spices. The wonderful thing about banana-based cakes is that they create a deliciously moist yet firm texture that stays fresh for days. The natural sweetness of ripe bananas, combined with chocolate sprinkles and tender apple pieces, creates layers of flavor and texture that make each bite absolutely irresistible.

Another banana bread recipe, I know, but like I said, I’m addicted and I need my fix! ;D It’s such a versatile, delicious type of cake with a texture that’s just perfect for my taste. Let’s get to the recipe!

Rustic Chocolate Chip Banana Bread with Caramelised Apple Topping

Why settle for ordinary when you can have extraordinary? Why get a basic banana bread when you can get one with chocolate and apples.

Ingredients

  • Sugar – 180g
  • Flour – 260g
  • Baking Powder – 1 Teaspoon
  • Baking Soda – 1 Teaspoon
  • Butter – 120g
  • Butter – For Greasing
  • Eggs – 2 Large (At Room Temperature)
  • Bananas – 4 (Medium, Ripe)
  • Milk – 1 Tablespoon
  • Honey – 1 Tablespoon
  • Chocolate Sprinkles – 100g
  • Apple – 150g (Chopped)
  • Cinnamon – 1 Teaspoon
  • Nutmeg – A Pinch
  • Cumin – A Pinch
  • Salt – A Pinch

Directions

  1. Start by preparing a baking pan lined with nonstick paper and greased with butter, preheat the oven to 160ºC, and set the pan aside.
  2. Combine the sugar and butter in a large bowl and whisk until you obtain a smooth cream. Continue whisking and add the eggs one at a time, whisking between each addition.
  3. In another bowl, mash the bananas until you have a purée, then mix in the milk and honey.
  4. In a third bowl, sift the flour and add the baking powder, baking soda, cinnamon, nutmeg, cumin, and salt, then mix.
  5. Then add the sugar mixture to the mashed banana mixture, mix until everything is well combined, then add the flour mixture, mix everything until you have a smooth creamy batter.
  6. Finally, add the chocolate chips to the batter, mix a little more and pour into the pan, cover generously with the chopped apples.
  7. Bake for 1 hour to 1 hour and 15 minutes. If the top starts to brown too much before 1 hour has passed, cover with aluminum foil to protect it, as you would for any cake. Remove from the oven when a toothpick inserted in the center comes out clean.
  8. Allow to cool before removing from the pan (as it cools, it will become denser and more stable, and it will also separate from the pan). Enjoy!
Notes: As you can see in other recipes, this typical banana bread recipe is super versatile, you can make it simple, but it handles all kinds of additions well, both in the batter and as toppings.

Make sure your bananas are very ripe (with brown spots) for maximum sweetness and moisture, that’s why this is a good recipe to make use of bananas that are too ripe.

Room temperature eggs incorporate better into the batter, creating a smoother texture.

Don’t overmix once you add the flour, this can lead to a tough banana bread. Fold gently until just combined.

The cumin adds a subtle warmth that complements the cinnamon beautifully, but if you don’t have it, you can omit it.

For extra indulgence, try adding a handful of chopped walnuts or pecans along with the chocolate sprinkles.

This bread actually improves after a day, wrap it tightly and let the flavors meld overnight.

Store covered at room temperature for up to 5 days, or freeze slices for up to 3 months.

If your apples start browning while you prep, toss them with a little lemon juice to keep them fresh.
