Portuguese Traditional Quince Jam • Marmelada
Quinces, though a lesser-known fruit, shine in Portugal as a thick jam. They're renowned for their pleasant aroma and are often described as a cross between an apple and a pear.
Ingredients
- Quince – 1kg (Pitted)
- Sugar – 800g
- Water – 100ml
Directions
- Begin by thoroughly washing the quinces, using a brush to scrub them well, as they’re cooked with the skin.
- Cut the quinces, remove the seeds, and weigh out 1kg. Place them in a pressure cooker with sugar and water, then mix thoroughly.
- Seal the pressure cooker and cook over medium-high heat until it reaches a boil, then simmer for about 10 minutes.
- Remove the cooker from the heat and let it cool naturally to release pressure.
- Open the cooker and blend everything well with an immersion blender. Pour the jam into small bowls lined with parchment paper, or for longer storage, place them in sterilized jars.
