I love these kinds of war oozing cheeses with diferent flavours, i think they are way better than strange dips with random things or worst yet commercial dips, why a nice warm cheese with some flavourings and you have a winner everytime.

Ingredients

  • Brie Cheese – 1 Small Wheel (about 250g)
  • Walnuts – 3 Tablespoons (Roughly Chopped)
  • Balsamic Vinegar – 2-3 tablespoons
  • Honey – 1 teaspoon (optional, for extra sweetness)

Directions

  1. Preheat your oven to 350°F (180°C). The best way to make this is to place the brie in a small ceramic or glass baking dish – this prevents the cheese from spreading too much as it melts and makes for a prettier presentation too!
  2. Using a sharp knife, carefully score the top of the brie in a crosshatch pattern, cutting about ¼ inch deep. This helps the toppings penetrate the cheese and allows it to melt more evenly.
  3. Sprinkle the chopped walnuts generously over the top of the scored brie. Drizzle with the balsamic vinegar, making sure to get some into the scored lines. If you’re using honey, drizzle that on top as well.
  4. Place the baking dish in the preheated oven and bake for 12 to 15 minutes, or until the cheese is soft and slightly bubbly around the edges. Don’t overbake – you want the cheese melted but not completely liquefied!
  5. Remove from the oven and serve right away while it’s hot and gooey. The cheese will continue to soften from the residual heat, so don’t wait too long!
Notes: Choose a ripe but not overly soft brie – it should give slightly when pressed but not be mushy. Room temperature brie works best for even melting.

Use a good quality balsamic vinegar for the best flavor. If you have aged balsamic, even better! You can also reduce regular balsamic vinegar in a small saucepan until syrupy for a more concentrated flavor.

You can prepare this up to 2 hours ahead – just assemble in the baking dish, cover, and refrigerate. Add 2-3 extra minutes to the baking time if starting from cold.

Serve with water crackers, baguette slices, apple slices, grapes, or even crispy tortilla chips. Don’t forget some small pickles or cornichons for those who like a tangy contrast!

Good variations: Instead of walnuts and balsamic, top your brie with chopped roasted red peppers, a generous pinch of dried oregano, freshly cracked black pepper, and a drizzle of good olive oil. Or add some fresh thyme leaves along with the walnuts, or try dried cranberries for a festive touch. Or mix chopped fresh herbs like rosemary and thyme with the walnuts before sprinkling on top. Or Add a pinch of red pepper flakes along with the walnuts for those who like a little heat!
