Ingredients

  • Shredded Coconut – 250 gr
  • Sugar – 150 gr
  • Eggs – 3 (Large, Room Temperature)

Directions

  1. In a bowl add the eggs at room temperature with the sugar, beat everything well until you get a whitish and creamy mixture.
  2. Then add the shredded coconut, mix well with a spoon until you get a homogeneous mass that you can mold if for some reason it is still liquid add a little more shredded coconut until you get a mass.
  3. Preheat the oven to 180ºC and prepare a baking tray lined with non-stick paper.
  4. Shape small balls of dough, they don’t have to be perfect, just about the same size, so they cook evenly.
  5. After the tray is filled, place it in the oven for 10 to 12 minutes (depending on the oven and the size of the balls), until they are golden brown.
  6. When they are golden brown take them out of the oven and let them cool a little before eating, you can store them in an airtight box and they will last a week.
Notes: Often for this sweet, each ball can be placed in a small paper mold. Also you can roll the balls in extra coconut for a overload ;D
