I absolutely adore these spreadable cheese tarts! Well, I love all kinds of cheese tarts, especially the traditional Portuguese ones, but these are also really good and super easy to make. Basically, you just make the cream, fill the puff pastry, and pop them in the oven, that simple.

The flavor is absolutely delicious, and I used that extra fluffy and crispy brand of puff pastry, I think they turned out beautiful and tasty! These delicious mini cheese tarts are fantastic because, unlike baked cream cheese tarts, these use triangle cheese like from Laughing Cow, making them much easier to make and absolutely delicious. This version, I added a touch of vanilla and almond for texture! Gotta say, the addition of the almond really helps give more texture.

The only thing I might change would be to reduce the sugar by about 20gr, since they are still very sweet, but I don’t have a sweet tooth, I would say if you like it sweet use the recipe as is, if you want a bit less, then just use 80gr. Let’s get to it!

Oh yeah nothing like some cute crispy creamy cheese tarts, this is a must try recipe, super simple to bake and delicious.

Ingredients

  • Puff Pastry – 200g (1 roll)
  • Eggs – 2 L (room temperature)
  • Sugar – 100g
  • Butter – 50g
  • Processed Cheese – 125g (8 triangles, room temperature)
  • Vanilla – 1 Tablespoon (Extract)
  • Almonds – 12 (1 for each cheese pastry)

Directions

  1. Start by cutting circles of puff pastry and lining muffin tins. This recipe easily makes 12.
  2. Preheat the oven to 200ºC or whatever the puff pastry package recommends.
  3. In a small saucepan, combine the sugar and butter over medium heat.
  4. When melted, add the vanilla and whisk the eggs in a separate bowl.
  5. Remove from the heat and then spoon the sugar and butter mixture into the eggs, stirring constantly. This is to raise the temperature of the eggs without curdling them.
  6. Combine both mixtures and return to low heat, add the triangle cheeses (at room temperature), mix until creamy, remove from heat again and fill each pastry with the cream, placing an almond on top of each cheesecake.
  7. Take them to the oven and bake for about 20 to 25 minutes until golden brown, remove from the oven and allow to cool slightly before eating. Store in an airtight container. Bon appétit!
Notes: You can add other things to the filling, like cocoa powder, shredded coconut, lemon or orange zest, coffee – all great choices! The key is using room temperature cheese triangles so they melt smoothly into the cream. If your mixture seems too thick, add a tiny splash of milk. Don’t skip the tempering step with the eggs – nobody wants scrambled egg tarts!

These keep beautifully in an airtight container for up to 3 days, though they’re best enjoyed within 24 hours when the pastry is at its crispiest.
