You have got to love these kinds of cupcakes, they are basically cooked apple stuck together by a bit of dough, its amazing, it has a sort of apple tart feel but in a cupcake format, its fantastic and a must try for apple lovers!

Ingredients

  • Apples – 6 small
  • Butter – 160g
  • Flour – 160g
  • Sugar – 150g
  • Eggs – 2
  • Flour – 75g
  • Sugar – 75g
  • Butter – 130g

Directions

  1. Peel the apples and cut them into small cubes, place them in a frying pan and cook them a little, just enough to soften them slightly and remove most of the water.
  2. Preheat the oven to 180ºC and prepare some muffin tins, or line some muffin tins.
  3. Start by making the batter. In a bowl, combine the room temperature butter and sugar and whisk until you have a smooth, white mixture.
  4. Add the eggs and whisk again until the mixture is smooth.
  5. Sift the flour and mix well with a wooden spoon, then set the batter aside.
  6. Add the apple cubes to the mixture and mix again until everything is well combined, then pour the mixture into the muffin tins.
  7. Finally, make the crumble topping. In a bowl, combine the flour, sugar, and very cold butter cut into small cubes. Mix with your fingers until you have a sandy texture, but don’t overmix.
  8. Now pour the crumble over each of the muffins, you can be generous 🙂 Bake for about 22 minutes until golden brown.
