French-Style Banana Cream & Mascarpone Cheese Filled Crepes

There’s nothing quite like sharing a dessert or even better, a super simple, practical, and delicious breakfast! I used bananas here, but you can totally use whatever fruit you’ve got hanging around, perfect for for a breakfast or brunch starting with a gorgeous stack of crepes, hehehe.

I’m leaving the classic french crepes recipe separate (just follow the link), this recipe is purely for the whipped cream with that lovely mascarpone touch I used. Actually, you could make a whole pile of crepes, eat some sweet ones for breakfast following this recipe, and then munch on the remaining crepes with savory fillings like cheese, ham, tuna, or sausages ;D

This is such a flexible little number – you can throw in other fruits, add some vanilla sugar for a more vanilla-forward version, or brown sugar for something more caramelized. The beauty is in the simplicity and the fact that you’re basically just assembling deliciousness!

French-Style Banana Cream & Mascarpone Cheese Filled Crepes

Who doesnt love some creamy crepes filled with sweet cream and mascarpone cheese and banana, match made in heaven.

Ingredients

  • French Crepes – 4
  • Banana – 1
  • Mascarpone Cheese – 100 g
  • Cream – 100 ml
  • Sugar – 30 g

Directions

  1. If you haven’t made the crepes yet, start by making them. Note that you can make them in advance and freeze them. When you want to use them, just let them thaw. Once thawed, you can use them directly or, if you want to heat them up, place them in a buttered frying pan.
  2. In a mixer, combine the cold cream with the sugar and whisk well until it forms whipped cream.
  3. Add the mascarpone cheese and whisk a little more until everything is well mixed.
  4. Now peel and slice half of the banana and finely chop the other half.
  5. Divide the whipped cream and mascarpone mixture into two parts, add the chopped banana to one part and mix.
  6. Finally, spread each crepe with the whipped cream and banana mixture, fold into quarters and serve with the remaining banana and cream on top. Bon appétit!
Notes: This recipe is super flexible, you can add other fruits, vanilla sugar for a more vanilla-forward flavor, or brown sugar for a caramelized twist.

Make sure your cream is cold for the best whipping results.

The crepes can be made days ahead and stored in the fridge with parchment between each one.

Try using slightly overripe bananas for extra sweetness and flavor.

If you don’t have mascarpone, cream cheese works in a pinch (though it won’t be quite as silky) or just whipped chantilly cream! ;D

For an adult version, add a splash of rum or banana liqueur to the cream mixture.

These are fantastic for brunch entertaining, just set up a little crepe bar and let people assemble their own! ;D
