Sometimes you want to take your weekend breakfast game to the next level, and that’s exactly what happens when brioche meets french toast! When the supermarket had a promotion on those brioche loaves, you know the type, super sweet and fluffy but way too big for normal consumption on one go, I found myself with half a loaf getting a bit stale after 4 or 5 days. That’s when inspiration struck… what better way to rescue days-old brioche than transforming it into the most luxurious french toast you’ve ever tasted?
This is the super fancy version of french toast that makes regular breakfast feel like child’s play heheheh. Using brioche bread makes it incredibly decadent, rich, buttery, and almost cake-like in texture. I cut the slices extra thick because this type of industrial bread, even when slightly dry, still maintains a soft structure for a long time, and thick slices help hold everything together while creating that stunning breakfast stack that’s pure Instagram gold, hehehe!
Sure, it’s what you might call “extra,” but sometimes that’s exactly what you want… to be a bit more fancy! This recipe serves 2 people easily, and trust me, even with my serious sweet tooth, I could only manage 2 slices from the stack and was completely satisfied and happy as can be. Lets check the recipe!
Brioche Bread French Toasts with Butter and Honey

Hehehe this is really an upscale french toast, perfect if you have a sweet tooth, also brioche bread altough slighly sweet it has a great texture and does fry beautifuly.
Ingredients
- Brioche Bread – 4 Thick Slices
- Eggs – 3
- Milk – 500ml
- Lemon – 2 Peels
- Butter – 1 Tablespoon
- Butter – To Taste
- Honey – To Taste
- Salt – A Pinch
Directions
- Cut the slices at least one day before making the French toast, as this will help the bread dry out more quickly.
- When it’s time to make the French toast, whisk the eggs in a bowl with a pinch of salt (if the bread isn’t already sweet, you can add a little sugar or vanilla to the eggs to give it a little more flavor).
- In another bowl, add hot milk and some lemon zest (I added lemon just to cut the sweetness a little).
- Add a spoonful of butter to a large frying pan over medium heat.
- Dip each slice in the milk, let it soak well (you can see if it is well soaked by squeezing the bread slightly, so you can feel if it is full of milk or if it is still firm in the center), then dip it in the egg and pour it into the frying pan, repeating for all slices.
- When one side is golden brown, flip and fry the other side. As the bread is large and the frying pan was full, I had to flip each side twice until it was golden brown.
- Remove from the frying pan and serve in a pile with a little honey and butter or whatever you fancy. Bon appétit!

Don’t use rustic or dense breads for this recipe, you want something fluffy and creamy. Milk bread or a soft sandwich bread works well as alternatives to brioche bread.
Since brioche is naturally very sweet, go easy on additional sweet toppings or it might become overwhelmingly sugary sweet.
The thick slices are key, they maintain structure and create that impressive stack presentation.
Let the bread really soak up the milk mixture for the creamiest interior texture.
This recipe is incredibly rich, so a little goes a long way, perfect for those days when you want fried food and cake all at the same time!
