Also called l’Innominato di Marmellata, an l’Innominato or “nameless one” in Italian is a sweet similar to a tiramisu but much simpler. This is a variation of a classic Italian children’s dessert normally made with Nutella, but this version celebrates Portuguese quince jam! Basically you make sandwiches with ladyfinger cookies and a cream like mascarpone, Nutella, jelly, dulce de leche or in this case quince jam, anything sweet that binds the cookies together well. You’ll dip them in milk, let them soak, then dust with shredded coconut, and pop them in the fridge to set just like a tiramisu.

It’s a simple sweet, so common in Italy that it doesn’t even necessarily have a proper name. It’s one of those perfect desserts to make with kids, no baking required, but I also think it’s a great sweet for anyone who wants to make something versatile, beautiful, and delicious quickly… perfect for the Valentine’s Day procrastinators! In this case with a Portuguese quince jam filling just to keep the spirit of thing going ;D Let’s get to the recipe!

Nothing like a simple sweet dessert and there is nothing simpler than this one, perfect for the kids, it just needs some assembly hehehe, its kinda a poor mans tiramisú but in the best of ways!

Ingredients

  • Champagne Biscuits – To Taste (AKA Ladyfingers Cookies)
  • Quince Jam – To Taste
  • Shredded Coconut – For Sprinkling
  • Milk – Enough for Dipping (Cold)

Directions

  1. Prepare three dishes, one with the shredded coconut, another with the cold milk, and a third for assembling the biscuit sandwiches.
  2. Spread a generous amount of the mixture on one half of the champagne biscuits, choosing the side without sugar, of course, then add another biscuit and make the sandwich, pressing just enough to stick the two biscuits together.
  3. Dip the biscuit sandwich in the milk, usually for about 20 seconds, turning it over. When you feel that the biscuit has absorbed enough milk and has started to soften (but not fall apart), turn it upside down, let the excess milk drain off, and place it on the plate with the shredded coconut.
  4. Mix well in the shredded coconut and place the biscuit sandwich, in a bowl or plastic box. Repeat until you have no more biscuits or the bowl or box is full, you can stack if you want. Place in the refrigerator to set for a few hours, ideally overnight, to make it really creamy, and that’s it!
Notes: For those who want measurements, for this recipe I used 2 packages of ladyfinger cookies (that’s 24 cookies), with about 60g (2 oz) of quince jam, 400ml (1⅔ cups) of milk, and 50g (½ cup) of shredded coconut 🙂 which made two platter-fulls. These are also the quantities used for the nutritional information, but note that you can make half, you can make ¼ or 3 times more, you can make it with different fillings, you have a lot of flexibility with this recipe, you don’t need to memorize the quantities, thats the point!

There are various brands and varieties of ladyfinger cookies, some softer and others crispier, and all varieties will absorb the milk at different speeds. So let them soak in the milk until they start to get soft, but not falling apart.

Use a good quality Portuguese quince paste (marmelada) for the best flavor—the denser, the better! If your quince jam is very firm, you can warm it slightly to make spreading easier, or just use a fork and mix and make it more jelly like.

This dessert actually improves overnight as the flavors meld and the texture becomes creamier. Perfect for planning ahead!

Keep refrigerated in an airtight container for up to 3 days. The cookies will continue to soften over time.

While this version uses Portuguese quince jam, you can experiment with Nutella (the Italian classic), dulce de leche, berry preserves jam, or even mascarpone cream, it just needs to be sweet and sticky to work! ;D
