What a deliciously interesting little treat! Many folks will see these chocolate covered balls and think, oh those are bonbons or truffles? But why not cake? Here’s your answer! This recipe is perfect for Carnival Day celebrations or any kind of festivity, making them an absolutely delightful gift when beautifully wrapped or presented in charming paper cups ;D
To make this recipe, you’ll need a special mold for making balls, or a ball griller (similar to a waffle maker or sandwich press, but with ball-shaped grids). Choose good quality chocolate or go with dark chocolate to give a special touch to these balls. The recipe makes about 20 balls, but if you want to make less, just cut the recipe in half or more, then double it!

Carnival Rainbow Chocolate Covered Cake Pops

Ohhh ohhh how about for Carnival just make a ton of little colorful cake balls! Have at it! ;D
Ingredients
- Flour – 300g
- Butter – 300g
- Sugar – 300g
- Vanilla – 2 Tablespoons (Extract)
- Eggs – 6
- Milk – 4 Tablespoons
- Food Colouring – 4 Colors (Blue, Green, Yellow, Red)
- Butter – For Greasing
- Chocolate – 200g
Directions
- Start the dough by mixing the sugar and butter at room temperature until you create a smooth dough.
- Then add the eggs, vanilla, and milk, and whisk everything until you create a homogeneous dough.
- Finally, sprinkle the flour into the mixture and stir until everything is well integrated.
- Divide the dough into 4 parts (or more parts if you have more food coloring or want to make one part without any color), then add a little food coloring to each part. I used about a teaspoon, but if you have more or less dough, adjust accordingly. You want a bright color, but not too much food coloring, which will affect the flavor.
- Preheat the oven to 160ºC (320°F).
- Now grease the pan with butter and pour a spoonful of dough into each space, then close the pan and bake for 15 to 16 minutes for this pan. Note that they cook quickly, so it’s better to try with less time and then return to the oven than to let them burn.
- Remove from the oven and, while still hot, remove from the pan, grease the pan again, and repeat the process until all the cake balls are done.
- Now use scissors to trim the edges and make the balls round, let the cake balls cool down completely.
- Melt the chocolate in a double boiler (place the chocolate in a saucepan and place that saucepan inside another saucepan with hot water on the stove), this creates a more uniform and less aggressive heat that will melt the chocolate well.
- Finally, place the balls on a rack and cover each one with chocolate, transfer the balls to non-stick paper to dry, and once dry, they are ready to eat 🙂 Enjoy!



Start with less food coloring and gradually add more until you reach your desired brightness. Gel food coloring works best as it won’t thin out your batter.
Every oven is different! Start checking your cake balls at the 13-minute mark for the first batch to prevent over-baking. They should spring back lightly when touched.
For a smoother chocolate coating, add 1 tablespoon of coconut oil or butter to the melted chocolate. This makes it easier to coat and gives a beautiful shine.
The uncoated cake balls can be made a day in advance and stored in an airtight container. Coat them with chocolate the day you plan to serve or gift them.
These look absolutely stunning when placed in colorful paper cupcake liners, arranged in a decorative box, or wrapped individually in clear cellophane bags tied with festive ribbons.
Feel free to add a teaspoon of lemon zest, orange extract, or almond extract to different colored batters for extra flavor dimension.
If you don’t have a ball mold, you can bake the batter as mini cupcakes, let them cool, then crumble and mix with a bit of frosting to form balls by hand before coating in chocolate.
