I usually make these types of cakes in a loaf pan so I can cut those beautiful tall slices, but this time I decided to go with a larger, wider pan to create a flatter cake, perfect for cutting brownie-like or fudge-style squares, hehehe! This choice is purely aesthetic though, use whatever pan you prefer because this is such a flexible type of cake that always turns out wonderfully.
This recipe is incredibly easy to make at home, very American in style, and absolutely perfect for using up those bananas that have gotten a bit too ripe. The warm spices combined with the natural sweetness of caramelized bananas and the fresh crunch of apple pieces creates a cake that’s both rustic and sophisticated, exactly what you want for a cozy fall treat!
Pumpkin Spice Caramelized Banana Loaf with Apple Chunks

What todo when you have some bananas getting too ripe, hehehe you gotta make yourself some banana bread, its a win... win... win all the way hehehe.
Ingredients
- Brown Sugar – 180g
- Flour – 260g
- Butter – 120g
- Butter – For Greasing
- Eggs – 2 (L)
- Bananas – 4 Medium
- Milk – 1 Tablespoon
- Pumpkin Spice – 2 Tablespoons
- Baking Powder – 1 Teaspoon
- Baking Soda – 1/2 Teaspoon
- Salt – A Pinch
- Apple – 1
Directions
- Start by preheating the oven to 160ºC and greasing a baking pan or large baking sheet with butter (if you want to remove the entire cake, then I also suggest lining it with nonstick paper).
- Combine the sugar and butter at room temperature in a bowl and whisk until creamy.
- Then add the eggs, one at a time, beating between each addition.
- Peel the bananas and mash them in a bowl with a tablespoon of milk to form a purée.
- In a separate bowl, combine the flour, baking powder, baking soda, pumpkin spice, and salt, all sifted well.
- Then combine all the ingredients in a bowl and mix well until you have a creamy, smooth batter, then pour everything into the pan.
- Peel and cut the apple into small cubes and sprinkle over the batter. Bake for about 1 hour until golden brown. Insert a toothpick into the center, if it comes out dry, it’s ready. Remove from the oven and let cool slightly before serving. Bon appétit!








ou can easily swap the apple for chopped almonds, walnuts, or other chopped nuts or dried fruits for different flavor profiles.
This recipe works beautifully in either a traditional 9×5 inch loaf pan for tall slices, or a 9×13 inch rectangular pan for brownie-style squares.
The riper your bananas, the better! Those brown, almost overripe bananas will give you the most intense banana flavor and natural sweetness.
This cake actually gets more moist and flavorful after a day or two, so don’t hesitate to make it ahead of time. Store covered at room temperature for up to 4 days.
