Ingredients

  • Chicken – 4 Thighs
  • Potatoes – 6
  • Onion – 1
  • Carrot – 1
  • Garlic – 4 Cloves
  • Olive Oil – A Drizzle
  • Red Pepper Paste – 2 Teaspoons
  • Piri-Piri Sauce – 1 Tablespoon
  • Oregano – A Pinch
  • Paprika – A Pinch
  • Pepper – A Pinch
  • Salt – A Pinch

Directions

  1. Wash, peel, and dice the potatoes. For a tender texture, pre-cook them for about 10 minutes before roasting.
  2. Add diced carrots, sliced onions, crushed garlic cloves, and season with a drizzle of olive oil, paprika, dried oregano, salt, and pepper.
  3. Place the chicken thighs on top and season with a drizzle of olive oil, paprika, red pepper paste, and Piri-Piri sauce. Spread this mix evenly over the chicken thighs.
  4. Covered, bake in an oven at 375°F for about 45 minutes until the thighs are tender. Serve and enjoy!
Notes: Experiment with other root veggies like parsnips or turnips. For a fiery touch, increase the amount of Piri-Piri sauce. Adjust to your heat tolerance!
