How about some delicious spicy roasted chicken thighs! We all know that the thighs offer juicier and tastier meat compared to the dryer breast cuts. Placed over some potatoes, this dish just sings with flavor.

These thighs are seasoned with the classic Portuguese piri-piri sauce. This condiment is famous for adding a little kick to any dish, very common seasoning for roasted or grilled chicken in Portugal.

Note that the type of potato used here has a softer pulp, akin to sweet potatoes, which roasts quickly. For a similar effect, grab small new potatoes or pre-boil larger ones for about 10 minutes before roasting, so everything gets tender and roasted at the same time, if it doesn’t take the chicken thighs out and put just the potatoes in the oven a bit more time to finish roasting, let’s check the recipe!
