Maybe its just me, but i think if you want something that tastes really rustic then you need to use vegetables and fruits, not just flavourings, so in this case for Easter why not make some cute mini cookies with sweet potato, these have a crunchy exterior and a pillowy creamy interior, it’s the epitome of rustic goodness. 🍪🍠✨

Rustic Sweet Potato Cookies • Broas de Batata Doce

Indulge in the charm of Sweet Potato Cookies, where rustic meets sweet in every bite. A simple, homey treat to satisfy your Easter cookie cravings.

Ingredients

  • Flour – 340gr
  • Yeast – 10gr
  • Sugar – 50gr
  • Cinnamon – 1 teaspoon
  • Nutmeg – A pinch
  • Butter – 100gr
  • Sweet Potato – 400gr (Mashed)
  • Salt – A pinch
  • Egg – 1
  • Sugar – To sprinkle
  • Cinnamon – To sprinkle

Directions

  1. Start by boiling or roasting the sweet potatoes, then mash them, season with a pinch of salt and pour into a large bowl.
  2. Then add the sifted flour, yeast, sugar, cinnamon, nutmeg and butter at room temperature, mixing everything well until you have a consistent dough.
  3. Preheat the oven to 180ºC and prepare a baking tray lined with non-stick paper.
  4. Shape balls of dough and place on the tray until you have no dough left. Brush each ball with whisked egg and a sprinkling of cinnamon and sugar.
  5. Bake for about 16 minutes until golden brown, remove and allow to cool before serving, enjoy and Happy Easter!
